Citrus Ricotta Loaf
Now this is a bake I can get behind! Moist, with a light citrus flavor that is not overpowering. It has a beautiful melt-in-your-mouth crumb, and there is no discernible cheese taste so even Mr. LiBella was pleased. I added a bit too much liquid to mine and almost had an overflow oven disaster, but the batter managed to stay in its pan and behave. I think I’ll have a slice as I type this!
Ingredients:
1 ½ C Sugar, granulated
¾ C Butter, softened
1 ½ C Ricotta, room temperature
3 lrg Eggs, room temperature
2 TB Lemon Juice
2 TB Orange juice
2 TB Lemon Zest
2 TB Orange Zest
1 ½ C Flour
2 ½ tsp Baking Powder
1 tsp Kosher Salt
Preheat oven to 350℉.
Grease and flour a loaf pan.
Combine the butter, sugar, and ricotta cheese until fully incorporated.
Add the eggs one at a time, combining fully, then add the zest and juice.
Mix the baking powder, salt, and flour together, then mix into the wet ingredients until just combined.
Bake for 50 minutes until a tester inserted comes out clean.
Cool on a wire rack for 15 minutes, then turn out and cool completely.
Dust with powdered sugar and enjoy!
